Shunichi Funakoshiya, Master Sushi Chef

Master Chef Shunichi Funakoshiya welcomes you to Bushi Traditional Japanese and Asian Cuisine in Tucson. Chef Funakoshiya was born in the seaport town of Otaru-city, Hokkaido on the Sea of Japan (north and west) side of Japan. Nestled against mountains on three sides and the Ishikari-wan Bay on the fourth, Otaru is known for its fresh seafood and is fondly referred to as "Sushi Town" serving Otaru/Hokkaido-style sushi. Chef Funakoshiya states that this style is distinct from Tokyo-style sushi.  Moving from Japan to the United States early in 2001 and settling in Austin, Texas Chef Funakoshiya established himself with Kenichi Sushi, a hot Austin restaurant known for contemporary Asian cuisine and world-class sushi. By the end of 2001 he transferred to Kenichi in Aspen, Colorado and became the #2 Sushi Chef at this four-star sushi restaurant.

In 2005, Chef Funakoshiya moved to Tucson, Arizona with his family joining a well-known Northwest-side sushi restaurant, Sushi on Oracle. Chef attracted a large following in his four years at Sushi on Oracle where he became known not only for his skills as sushi chef, but for his sushi embracing both the traditional Japanese style and Asian fusion creations.

Bushi Traditional Japanese and Asian Cuisine is very pleased to have Chef Funakoshiya join the restaurant in January 2011 as Executive Chef. We know that you will enjoy the creations of Chef Funakoshiya as you enjoy world class sushi and traditional Japanese and Asian cuisine at Bushi!
