Caffe Ibis is proud to have been a roaster and café sponsor for 25 years. Yes, we were at that very first open meeting and convention in New Orleans when Coffee Kids launched their campaign. Thank you for giving us a chance to give back. We are also among the earliest certified organic roasters, the original 6 fair trade roasters and among the earliest Smithsonian “Bird-Friendly” roasters.

The following gift package includes four 12 oz bags of Triple Certified Organic, Fair Trade, and Smithsonian Bird-Friendly coffees:

Mexican Chiapas: The Grapos cooperative. Grown at 4500-5400’ in rich volcanic soils of the Sierra Madre in South Western Chiapas, Mexico. This is a classic wet process and patio dried preparation. Arabica bean coffee using Bourbon and Typica varieties. The coffee is medium roasted and has fine sweet aroma with cedar notes. The cup has cocoa and caramel with delicate fruit and hints of nuts with a lingering cocoa finish. The acidity is crisp and dry. The body is light and smooth.

Café Femenino: The Café Femenino Cooperative. Grown at 5400’ on the eastern slopes of the northern Andes mountain range in the Lambayeque region of Peru. The women of Café Femenino represent the first ever attempt to spotlight women coffee farmers. The coffee is Arabica bean utilizing Typica, Bourbon, Caturra varieties. The coffee is a blend of medium roast and dark roast and has a sweet aroma with chocolate and nuts. The cup is sweet with cocoa, caramel, nuts and a hint of dried fruit. It is softly bright with medium body and sweet chocolaty, creamy, clean finish.

Swiss Water Decaffeinated Peruvian Rainforest: The La Florida Cooperative. Grown between 4800-6000’ in rich organic soils of the Chanchamayo region of South Central Peru. The coffee is Arabica bean utilizing Typica, Bourbon, Caturra, Pache, and Catimor varieties. It is medium roasted and has a fruity and chocolaty aroma with a sweet, clean cup with a hint of cocoa. It has a light to medium body and lively acidity with fruit and chocolate in a lingering clean finish.

Guatemala Forest: The Asobagri Cooperative. From the “Hidden Valley” of the Huehuetenango region. It is grown at 3600-5000’ approximately 200 miles north of Guatemala City. The coffee varieties include Old World Bourbon along with some Caturra. It is wet milled and sun dried. We roasted it to a medium roast. The aroma has hints of spice, fruit and flowers. It has a refreshing brightness with nutty pecan and orange marmalade in the cup with a solid medium body. It has a chocolaty sweet clean finish.
