Item Description
3 Tins of Gourmet Dark Chocolate: Paired with Wine
This premium dark chocolate is blended exclusively from the highest quality cacao beans imported from around the world. Our dark chocolate can be enjoyed by itself, or, as an added pleasure, it can be paired with a select group of red wines. To truly enjoy CocoaVinoso and capture its essence, we suggest that you try some of the recommended pairings: an elegantly aged Cabernet, a distinct Syrah, and of course, the quintessential California Zinfandel
2008 Ehret Cabernet Sauvignon
Ehret Family's Bavarian Lion Vineyards have been in the family since the mid 1990's and showcase the best Knights Valley has to offer. The Knights Valley AVA is protected from the marine in?uence of the Pacific Ocean, making it the warmest AVA in Sonoma County. The vineyards on the estate range from 400-800 feet in elevation and are located just north of Calistoga and east of Alexander Valley, on the foothills of Mount St. Helena. The unique topography and soil content make this a most desirable area to grow Bordeaux and Northern Rhône grapes. The soil consists of well drained, very gravelly and sandy loams formed from mixed sedimentary and basic rock. Winemaker’s Tasting Notes: 2008 began with a cold winter, and a cool early spring with heavy rain storms. By mid-spring the rains stopped and weather warmed up nicely for bud-break. Summer was a little cooler than is typical, but heat in August and September matured the grapes beautifully, and the harvest was excellent. Our 2008 Cabernet Sauvignon, Knights Valley, has aromas of dark cherry, blackberry, sweet spices, and mocha. The flavors invoke the same, with a touch of black tea and dark chocolate on the finish.
2009 Rosenblum Cellars Rominger Vineyard Syrah
Stylish and refined, our Rominger Vineyard Syrah exhibits a lovely, fruit-intensive character hemmed by a melody of varietal and barrel spices. Mellow aromas of molasses, black olive, clove and dark fruit lead the nose. Flavors come alive on the palate, exploding with black, brambly berries; Bing cherries and cassis. The addition of Viognier during fermentation gives a boost of fruit that extends into a big finish. Intricately structured, the wine combines richness and finesse, resulting in a highly satisfying wine. Pasta Bolognese or grilled rib eye would make an excellent pairing. Vineyard The Rominger Vineyard sits on the east side of the Vaca Mountains in Yolo County. This area, which is adjacent to the well-known Napa Valley, intrigued us with its similarities to Northern Rhone and its proclivity for Rhone varietals. Located on a hillside with southern facing exposure, the vineyard experiences an abundance of warm sunshine, which is balanced by cool delta fog in the evenings. Soils are Corning gravel and loam with hardpan subsoil. The Rominger family, who owns and operates the vineyard, also cultivates and sells budwood to vintage nurseries. With such accessibility to a variety of unique clones, we were able to have the Chapman Hill block of the vineyard planted with very specific Syrah, hand selected for Rosenblum. Chapman Flat, adjacent to the hillside, produces the Viognier that we use in the wine. Both sites are low yielding with intense, expressive fruit.
2010 A. Rafanelli Dry Creek Valley Zinfandel
Since the early 1900's the Rafanelli family has been growing grapes and making wine in the Dry Creek Valley. Four generations later they are still keeping with the tradition, growing premium grapes and producing world class wines. The winery is small, and being family owned and operated, production is limited, with the focus on quality not quantity! The family prides themselves on producing consistently exceptional wines year in and year out, specializing in some of the finest Zinfandel, Cabernet Sauvignon, and Merlot. A bold Zin rich in fruit that is both juicy and briary. Stylistic, fresh and vibrant coupled with toasty spice aromas and a touch of honey vanilla. The brightness awakens the palate and makes it a delicious pairing with many food dishes. With a great balance of acidity this wine will age gracefully in the cellar for years to come.
