VARIETAL: 100% Carignan
VINEYARD: Self Vineyard, Paso Robles, CA
TASTING NOTES: Carpaccio, Licorice, Indian Spice, Dry Redberry, Fresh Meat
PRODUCTION: 60% American Oak. 100% Destemmed. Fermentation is started as soon as the wine is destemmed, then sent to a hot room. Pressed 2 weeks after fermentation.
ELEVAGE: 10 months aging time on light lees

These wines are made by two friends from different continents. Union Sacre exists at the meeting of worlds. Made by two long time friends, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, oenology degree holding ex-boxer from France, Philip is a self-taught designer from Michigan who kind of misses living in a van.
Between the two of them, Xavier and Philip have 25+ years experience working in Central Coast wineries. Xavier has been cellar master or assistant winemaker for some of the Central Coasts most luminous wineries. Philip cut his teeth at Proof Wine Collective before taking on the creative director role at Herman Story and Desparada.

Please note, this is a fundraiser so there are no refunds and Templeton Education Foundation is not responsible for items lost or damaged during shipping and/or mailing. Winners are automatically contacted at the close of auction and your credit card will be processed within 48 hours. Please make sure in advance your credit card information is current and on file with Bidding for Good. Templeton Education Foundation reserves the right to reassign your item to the next highest bidder if payment is not made or pick up arrangement is not made within two weeks of close auction.
Free delivery to North SLO County winners. Gift Certificates will be sent via certified mail. Bidder is responsible for shipping and handling fees and any additional insurance, which will be added to the winning bid amount. Note that wine shipping laws vary widely from state to state (e.g. shipping to Utah is prohibited).
