FIG, located in Santa Monica at the Fairmont Miramar, is a neighborhood bistro committed to fresh, seasonal cuisine. The menu features diverse Southern California bounty, sourced from multiple weekly visits to the local farmers markets and from specialty foragers that comb the coastline for hard to find items. Executive Chef Jason Prendergast, trained in the classic French tradition, brings a fresh, modern style of cooking that emphasizes the innate flavors of each ingredient. In fact, he knows this farmers and fishermen so well that he can tell you where livestock was raised and what their diet consisted of, name the fisherman, and tell you where his catch was caught.
